Kaip pasigaminti makaronus (Tagliagelle) namie?

Nuo mažų dienų maisto ruošimo procesas man atrodė itin patrauklus: negąsdino troškinį virti daugiau nei 2 val., o cepelinų, parduodamų parduotuvėse, skonio neįsivaizduoju dar ir dabar. Todėl koldūnų ar makaronų gaminimas namuose įprastas ir smagus užsiėmimas. Mano mėgstamiausi gaminti makaronai - paprastučiai ilgi, plokšti ir platūs Tagliagelle. Na, jie gal ir nebūna visiškai idealūs, tačiau itin skanūs, švieži, o svarbiausia pagaminti su meile. Kadangi ilgais rudenio vakarais tešlos maišymas ir minkymas įgauna savotišką meditacijos formą, leidžiančią būti čia ir dabar, nusprendžiau Tagliagelle gaminimo proceso eiga pasidalyti su jumis.

Pirmiausia, makaronų gaminimo malonumas - prabanga, kurios kasdien sau leisti neįmanoma. Užtat tam yra sugalvoti, jau paminėti, ilgi lietingi rudenio vakarai ir savaitgaliai. Be keleto laisvų valandų, labai svarbu ir nusiteikimas - teigiamos emocijos ir kantrybė. Taigi, kai visu tuo apsirūpinsite, pagaminti Tagliagelle nebus labai sudėtinga, net ir neturint makaronų gaminimo mašinėlės. Būtina, kad savo virtuvėje atrastumėt medinę lentą arba medinį paviršių, šakutę, kočėlą ir aštrų peilį. Žinoma, dar reikės:

2 puodelių miltų

1/2 šaukštelio druskos

3 kiaušinių

2 trynių

1 - 2 šaukštų alyvuogių aliejaus.

Pamaitinsite 4 pasta mėgėjus. Iš tiesų, abejoju, ar kas nors atsispirtų naminių Tagliagelle lėkštei, net jei ir nebūtų didelis makaronų mylėtojas. Taigi, rišamės prijuostes ir pradedam :)

1 žingsnis: Supilkite miltus ant švaraus paviršiaus ir viduryje padarykite didelį "šulinį". Miltus apibarstykite druska. Į "šulinį" įmuškite kiaušinius, sudėkite trynius ir įpilkite aliejaus.

2 žingsnis: Atsargiai - nenugriaunant šulinio sienų - šakute išplakite kiaušinius su aliejumi. Tada lėtai įmaišykite į plakinį miltus, po truputį juos verčiant į vidurį, kol gausite lipnią masę.

3 žingsnis: Rankomis į šią lipnią masę įmaišykite prie "šulinio" kraštų likusius sausus miltus. Gautą "gumuliuotą" ir nepaklusnią tešlą padėkite ant miltais pabarstyto paviršiaus ir minkykite kol gausis vienalytė ir elastinė tešla. Tai užtruks apie 10 - 20 minučių. Minkyti reikėtų taip: viena ranka prilaikykite tešlos kraštą, o kitos rankos delno apačia stumkite tešlą nuo savęs, kad ji išsitemptų. Taip ištemptą tešlą perlenkite ir vėl stumtelėkite ir vėl perlenkite ir t.t.Tešlos rutulį įvyniokite į maistinę plėvelę ir palikite šaldytuve apie 30 - 50 minučių "pailsėti". Poilsis BŪTINAS :)

4 žingsnis: Tešlos rutulį padalykite į 4 lygias dalis. Paimkite vieną dalį (likusias uždengiame rankšluostėliu, kad nedžiūtų) ir ją kočiokite labai plonai. Kuo ploniau iškočiota tešla, tuo skanesnis galutinis rezultatas:)

5 žingsnis: Kiekvieną plonai iškočiotą lakštą susukite voleliu (nuo trumpojo krašto iki trumpojo krašto) ir supjaustykite 5 mm pločio juostelėmis. Išvyniokite juosteles ir sumaišykite jas su trupučiu miltų.

6 žingsnis:10 minučių palikite tagliatelle džiūti, kol užvirs didelis puodas vandens :)

    Nedegu aistra makaronams. Mėgstu, bet, nū, tikrai galiu ir be jų. Bet skaičiau šitą įrašą ir mintyse piešiau vaizdą. Šeštadienio popietė. Lauke didelė audra. Aš viena virtuvėje. Jauki prietema, bet nejungiu šviesos, kad geriau matyčiau tai, kas dedasi kitapus lango. O priešais langą stovi stalas. Miltuotas. Virtuvėje šilta ir tyliai groja muzika. Bardai. Aktorių trio turbūt. Aš minkau tešlą makaronams. Lėtai, neskubėdama, bandydama atiduoti visas teigiamas emocijas, kurias sukelia procesas, tam nedideliam gumului ramybės. Kol jis ilsisi, sumaišau tešlą pyragui. Dangus pradeda maišytis su žeme, aš pjaustau tešlos ritinėlius ir girdžiu, kaip židinyje ima spragsėti malkos. O padažas, atleiskite, mielasis, jau jūsų reikalas. Ir išvis, mano darbas čia baigtas. Einu dengti stalo… Aj, nū. Labai jau romantiški šitie makaronai. Nieko negaliu sau padaryti. Ir blogo šito aura tokia. Romantiška. Jauku čia.

    Superinis receptas, isbandyta!!siulyciau tik panaudoti makaronu masinele, bus isvis paprasta ir greita:)
    O pigiu masineliu tikrai yra skelbimu portaluose, nereikia jokiu prabangybiu ir permoketi uz varda. Tikrai pati naudoju ir mano seima maitinasi daug sveikiau, bent jau zino ka valgo :)))
